'We call this our party pet nat, which is kind of lame, but kind of accurate. Grown down the mountain from home base in the Whitlands by the great man Richard Carson. He's a lovely guy, offers up a mean quiche and absolutely hates crows. If the King Valley was the hull of a ship then the Dolcetto and Chardonnay blocks would sit right on the starboard bow. From the top if you look really closely you can just make out the edge of the vineyards in Whitlands, sitting 300m above and to the south. The origins of the wine are disputed, Sam believes it was his idea, but I know for a fact it wasn't. But what an inspired blend it is. Dolcetto is a real fruit forward pleasure machine and combined with a bit of racy Chardonnay and a touch of Gewurztraminer, gee whiz it makes for an electrifying blend.

Production notes:
70% Dolcetto, 20% Chardonnay, 10% Gewurztraminer 

Picked 2am on the 1st of March 2021, and soaked for 10 hours before being pressed and settled. Pressing ratio was roughly 70%, 25% more than 2020 as there was no smoke taint to deal with resulting in more colour and more flavour. Ferment rocketed this year given the earlier picking date and warmer weather, so catching this beauty at the optimal sugar level was the hardest task and required babysitting bordering on obsession.  Bottled with 16 grams of residual sugar per litre. Inverted, chilled, hand disgorged, topped, re-capped, cleaned, dried, labeled and boxed for your drinking pleasure. 11.8%. 

Tasting notes:
Drier than the 2020 but with more fruit given the harder pressing ratios. Fruit salad explosion aromatically, with that primary watermelon vibe dominating. Plenty of carbonation which balances the juicy fresh fruit, and mid pallet texture the Gewurz brings perfectly, but also makes it almost too easy to drown a bottle or three.'
