Ricky Evans isn’t just a pretty face! This full time winemaker has just recently opened a bar/bottleshop (Havilah) in Launceston and has also released a 2nd label named Havilah. Havilah will replace his Two Tonne Tasmania (TTT) Ziggurat range, with most of the fruit coming from Tamar Valley.

Ricky says he was looking for that pure and fruit-driven Tasmanian style, with added texture from barrel ferment and lees contact. The fruit is from two vineyards, the majority from Relbia and the balance from West Tamar. Both parcels were picked on the same day, whole-bunch pressed, then settled and racked into seasoned oak and one small tank ferment. After fermenting to dryness it was left on gross lees, with no stirring for three months.
