Each year we make our rosé from this parcel of Mornington Peninsula Tempranillo but at the time of harvest our press was all tied up with a backlog of white grapes. Our only option was to drop the fruit into a red fermenter (fully destemmed) with the lid on and turn the cooling on with the idea to press it in a day or two and make a rosé with a touch more colour. However in the chaotic nature of vintage, it was forgotten and by the time it was remembered the wine had well and truly kicked off fermenting (carbonically) and was almost sugar-dry: our only option was to make a dry red. Pressed off skins after eight days and transferred to large-format oak and stainless steel tanks, the wine was bottled in the spring. ‘Joven’ is the Spanish word for young, referencing a wine made to be enjoyed in its youth, yet this wine has the structure to age if needed.'

- Polperro

//cdn.shopify.com/s/files/1/0034/1409/8033/files/9E697B42-D606-42B2-816C-7B5916A16D94_1_201_a.jpg?v=1761798684
defialy-pale-blue-eyes-2024-savagnin
Defialy 'Pale Blue Eyes' Savagnin 2024

100% King Valley Savagnin — direct-pressed, barrel-fermented and oxidatively aged on lees in seasoned oak for 12 months, then one month in stainless prior to bottling.

750 mL · 12.9% alc.

Unfiltered, unfined & wild-fermented.

//cdn.shopify.com/s/files/1/0034/1409/8033/files/37CDAD19-29A4-479F-9C20-DDB300765B15_1_201_a.jpg?v=1761799232
bande-apart-aligote-2024
Bande Apart Aligote 2024

Think Sunnyboy meets lemon rind — bright, zesty and mouth-watering.
