We have met this wine many times over the years, and all the while it kept moving, fermenting slowly in its own good time. A bountiful vintage, the directly-pressed juice wine was initially in vats and then transferred to several types of vessels - two foudre (one old and one new), one 500 litre barrel and a 700 litre tank. it was finally assembled for bottling in August 2024, much to Tony's relief, particularly because, as he said t us \"you can feel the clay\". It is nutty and complex but still fresh, a truly exceptional wine. It has no additions and Tony thinks it will happily age for at least 10 years.
