And what better way to make a Sherry Cask Whisky than straight from a Sherry cask in Jerez!\u003c\/p\u003e\n\u003cp class=\"p2\"\u003eThis is a single cask release of a single malt whisky, made from malted barley grown and distilled in Castilla la Vieja, Spain. ‘La Bota de Malt Whisky bota no. 66’ is roughly just over 12 years old and spends at least 7 years in a single dry Oloroso Sherry Cask.\u003cbr\u003e\u003cspan class=\"s1\"\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e\u003cspan class=\"s1\"\u003e46% Alc and only 880 bottles were made in total. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e\u003cspan class=\"s1\"\u003eThis is one of the most sherried whiskies that we have tried, but in no way a sherry bomb. There is a lot going on in this whisky:\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"p2\"\u003eNose of honey, sweet tobacco, roasted grain, charred oak, hints of smoke, spices, cocoa, caramel, walnuts, balsamic, dried fruit, leather and slight sea spray. The palate is sweet with muscatel grapes, sweet tobacco, oak, sweet spices, slightly smokiness, caramel slice, beeswax, toasted walnuts, dried fruit, toast, hints of cured meat, and lots of sherry notes. Grapes are picked by hand on this domaine.\u003c\/p\u003e\n\u003cp\u003eThis is a very good food wine. The alcohol percentage is 12.5% and there is a very small amount of residual sugar (2.7 grams per litre) while still finishing dry. They have slowly added to it and planted new vines but it is still tiny. They currently have Pinot Noir, Gamay, and Sauvignon Blanc vines but the two wines we have for our first offering are both made from 100% Pinot Noir. The work organically in their vines, which are in clay and limestone soils, and are part-way through the process of conversion to achieve organic certification.\u003c\/p\u003e\n\u003cp\u003eIn the cellar they ferment their wines naturally and neither of these wines have any additions. They also do no filtration or fining. Pinot Noir, in particular, loves limestone. The vineyard is currently in conversion to organic.\u003c\/p\u003e\n\u003cp\u003eThe whole bunches were macerated for 21 days with one or two punch downs. The 21 days of keeping the skins in contact with the juice ensures that the anthocyanin (which provide the colour) and the tannins (which help preserve the wine) are sufficiently extracted.\u003c\/p\u003e\n\u003cp\u003eAfter pressing it was aged for 11 months in barrels without racking. No sulphites were added to this wine.
