Very, very fine bead, gentle like a butterfly walking across your arm. On the nose quite savoury, almost like a parmesan rind, surrounded by brioche, preserved lemon, and ginger. There’s a touch of stone fruit, like a mid-season apricot or pluot. So wonderful to see this as a sparkling wine next to its still form. All this leads to an incredible expression of terroir that is unique, unparalleled, and unmistakably alive. Also a note on these distinct labels, in addition to being a winemaker, Stéphane is a passionate jazz saxophone player, and has named his three cuvées after a different jazz mode that each wine reminds him of - Dorien being a versatile, harmonious and playful jazz improvisation technique. 

The Dorien cuvée is the most reticent and complex of Stéphane's cuvées. The wine needs time in the bottle in order to express its full potential as an epic, rich, and structured wine. The first release of Dorien is a single vintage (2014) and was disgorged in 2020. Future bottlings will be from the perpetual solera of the Hautes-Mottes vineyard, starting in 2014.

Blanc de Blanc (100% Chardonnay) 

Base Vintage: 2016, reserve 2015, 2014

Vinification:  Native yeast fermentation. 65% of 2016 in barrels, and 35% reserve wine (starting 2014). Complete malolactic fermentation. 

Aging on lees: 3 years and 8 months

Disgorgement date: March 2022

Dosage: 1g/L
