Denton View Hill Yellow 2015
If you ever wondered what an Australian version of a Jura wine would be, this Chardonnay from Denton View Hill would be it. This wine is oxidised and aged under flor in oak. Absolutely stunning wine if you love Jura style wines. Aromatic, lots of toasted nuts, fino style sherry in character, as well as lemon and Yuzu citrus goodness, pomelo, spice, white nectarines and racy acidity. Will age wonderfully if you can be patient enough to keep it. A really exciting new style of wine for these shores that we rarely see outside of Jura.
'20% fermented as whole bunches to dryness, balance whole bunch pressed. Matured in old french oak with wild yeast ferment and wild malo-lactic fermentation (100%). Left on full lees and without topping for 2 years the barrels slowly began to ullage and develop a flor on the surface of the wine. No sulfur was used through maturation and the flor character appeared stable and thick. Over the 2 years this flor growth contributed lovely almond and parmigiano rind characters. Bottled without fining or filtration september 2017. A final barrel of this same wine will be bottled and labelled separately in September 2019 (4 years under flor).
The granitic soils of the Denton Vineyard show strongly here and the high acid and tannin of Denton chardonnay is what allows this wine to work so well under flor. The typical flint, talc, river stone, jasmine and citrus, layered with almond meal and cheesy, waxy flor characters. The wine has held it's freshness and acidity extremely well.'
