Domaine Pignier Crémant Du Jura NV
Established by monks in the 1300 the Pignier family took over in 1794, the family
grow all their own fruit over 37 acres at the foothills of Jura mountains. Current head winemaker Maria Florence Pignier went through the process of Demeter Biodynamic certification and this was completed in 2003.
80% Chardonnay and 20% Pinot Noir off clay and limestone, there is no dosage in this wine instead 2015 unfermented juice is added to 2014’s wine in the bottle to cause the secondary fermentation. 100% Malo and 30 months on lees before being disgorged in January 2018. Base wine fermented in old oak. Dried fruit and hazelnut characters.
