Domaine Pignier Cuvee A La Percenette Chardonnay 2017
Established by monks in the 1300 the Pignier family took over in 1794, the family
grow all their own fruit over 37 acres at the foothills of Jura mountains. Current head winemaker Maria Florence Pignier went through the process of Demeter Biodynamic certification and this was completed in 2003.
100 % Chardonnay from blue clay soils, this single vineyard chardonnay is slow
pressed into 228L old oak barrels with no settling or racking has regular lees stirring and barrel top ups for 12 months. Bottles on a flower day shows lemon, chalk, brine, quince and white flower characteristics.
