Domaine Pignier GPS Vin Blanc 2018
Established by monks in the 1300 the Pignier family took over in 1794, the family
grow all their own fruit over 37 acres at the foothills of Jura mountains. Current head winemaker Maria Florence Pignier went through the process of Demeter Biodynamic certification and this was completed in 2003.
The “G” in this wine comes from a lot of people from Jura referring to Chardonnay as Gamay Blanc. The percentages are were planted in a single plot as 40% Chardonnay, 40% Poulsard and 20% Sauvigin on limestone and decomposed slate. They are all harvested and processed together at the same time, fermentation takes place in old oak for an 8-month period, this wine contains no SO2. Honey, citrus, hazelnut. lots zesty acidity.
