Wonderful Village level Chablis, that you could drink all day.
Gently harvested and whole bunch pressed into stainless steel for a long, natural fermentation. On lees for about 12 months, then racked into stainless steel for roughly 12 months aging. Lightly fined with bentonite and filtered with very low SO2 additions prior to bottling. Energetic and crisp, this wine has delicate notes of struck match, pink grapefruit, apricot, white peach and pear, offering an aromatic complexity few in Chablis can deliver. Long finish, full of texture and ‘chalky’ grip.
