Havilah Rosé 2020


Ricky Evans isn’t just a pretty face! This full time winemaker has just recently opened a bar/bottleshop (Havilah) in Launceston and has also released a 2nd label named Havilah. Havilah will replace his Two Tonne Tasmania (TTT) Ziggurat range, with most of the fruit coming from Tamar Valley.

This is one of the first wines to see the light of day from the Swan Bay planting (Woodlawn Park). It's Pinot Noir (80%) and Chardonnay (20%), all picked on the same day and pressed together. The juice was then settled and racked to a mix of seasoned oak and stainless and left on lees until the right time to rack and blend (the Pétillant version of this juice is yet to come, bottled from tank before end of ferment). Again, Evans was looking for a crunchy and fresh, pretty thing for people to crush in the sun.
