Konpira Maru Gymkata Syrah 2018


'This is our fourth vintage of the Gymkata, and every year has been slightly different due to variation in the weather from year to year (2016 super hot, 2017 super cold for example!), however there have been some consistent central themes of strawberries and white pepper that make the wine so damn pleasant to drink. This year could be the golden vintage. Slotting in at 13.5%, even tannin and more white pepper than a motel bistro – proof of the absolutely ridgy didge cool climate credentials of this site. A nice and quick malolactic fermentation went the wine pretty much went undisturbed until it was racked in the following spring. This wine looked so damn good in tank I really hope we manage to capture all that magic in the bottle!


Quarry Ridge Vineyard, Kilmore, VIC


Hand-picked (Quarry Ridge) on the 3rd of April, 2018 at a baume of 12.8 and pH of 3.25. 80% destemmed (not crushed) and 20% whole-bunch. Cold-soaked 5C for 7 days and then wild fermented for 20 days. Maceration post-ferment for 7 days. Plunged once or twice a day depending on fermentation activity. Racked three times. 18ppm fSO2 before bottling.


Incredible aromatics of classic cool climate white pepper, violets and berry coulis. Long palate with soft and velvety tannins with a background of incredible pepper spice.'
