Though a Pet Nat, there is just a very light fizz, yet this is a gorgeous wine replete with pristine acidity and a kind of golden, honeycrisp apple element illuminating the mid-palate. Refreshing as ever from Gregoire Perron who tends 2.5 hectares of vines in Journans, Bugey, France.

Vinification: A blend of 80% Chasselas and Jacquère hand-harvested from vineyard sites around Leman Lake and Les Abymes, respectively. The grapes are pressed and co-ferment before a short élevage. Bottled unfined, unfiltered, no additional SO2.  12% ABV

'La Combe aux Rves (The Valley of the Dreams) is located on the Bugey border, in Revermont, Journans. Since 2009, Grgoire Perron has been working Savoyards and Jurassiens wine varieties on steep plots of old vines. Across two-and-a-half hectares, different plots include Mondeuse, Altesse, Pinot Noir, Poulsard, Chardonnay, Gamay and Geushe Noir. Grgoire produces no more than 5,000 bottles, his philosophy and his knowledge on viticulture guarantee him some impeccable and top calibre grapes. One to try new things and experiment each year, he has now produced a small range of wines aged in qvevri in his backyard. No addition, no fining, filtration and no sulphur added.'
