Sassafras White Ancestral Sparkling 2019


One of the most anticipated Pet Nat's of the year. Delicious and very easy to drink. This years vintage has gone back to having more Savagnin as the main variety, which to us is always a plus! 

'The 2019 Chardonnay Savagnin Ancestral is made with Chardonnay grapes from Tumbarumba (grown by Richard Cotton) and Savagnin from Canberra (Quarry Hill in Murrumbateman). 70% Savagnin, 30% chardonnay (Tumba hail knocked back chard available). The Savagnin drives the aromatics and flavour of this wine with characters of white peach, lemon pith, tonic water and crisp apple.

Made by the Ancestral method, using the original grape sugars and yeast, it was carbonated in this bottle. Like a bottle-conditioned ale or cider, there will be a small amount of yeast at the bottom, so chill upright.'
