Most tequila — even bottles labelled "100% agave" — can legally contain additives: colouring, flavouring or sweeteners, with no requirement to say so on the label. Paladar doesn't use any. It's made by the Orendain family, one of tequila's founding families and the people behind Arette Tequila, under fifth-generation master distiller Eduardo Orendain Jr.

Paladar's agave is grown organically on the family's own land in Jalisco — no pesticides, no fertilisers — harvested at seven years, slow-roasted in brick ovens, and fermented in open-air pine vats with wild and proprietary yeasts before double distillation in a copper and stainless still. Every bottle is hand-dipped in volcanic soil from the agave fields.

Paladar's commitment to sustainability extends beyond the agave fields — spent agave fibre (bagazo) is composted and returned to the fields, and packaging leans into recycled materials where possible.
