Fanny Sabre Beaune Blanc Les Prevolles 2022
'Les Prevolles is named after the lieu-dit (Les Prevolles) where the vines are planted, which is on the plain between Beaune and Pommard.
Fanny’s vines cover only 0.12 hectares. The vines are approximately 40 years old. The viticulture has been organic since 2019 and is in the process of certification.
After hand sorting in the vineyard, the grapes were directly pressed and the juice settled for 48 hours prior to aging in 500 litre and 228 litre oak barrels.
The wine was aged on lees with no interventions except small additions of sulphites after malolactic fermentation and during aging. It was racked after 11 months and then lightly filtered before bottling.
Fanny’s observation is the wine has great depth and length for a village appellation. 12.5% ABV.'
