Fanny Sabre Bourgogne Rouge 2023
'This wine is not quite Pommard, but it is as close as you can get without it being so.
Fanny’s Bourgogne Rouge comes from three formerly Pommard plots which were declassified after World War 2!
The soil is clay and iron, typical of Pommard terroir. The vines are approximately 40 years old and the viticulture is organic certified by ECOCERT.
Whole bunches were macerated in open tronconique oak vats with punch down and pump over twice per day for approximately 2 weeks during alcoholic fermentation before pressing.
Aging on lees was for 11 months in a combination of 400 litre barrels and a 20 HL tronconique oak vat, with a proportion of the barrels new. There was no racking or filtration.
To paraphrase Fanny, it is “very digestible and delicious, a fruity, balanced and sunny wine, with the quality of Pommard terroir.” 12% ABV.'
