The En Aspis lieu-dit in Pupillin is renowned for its heavy multi-coloured Triassic clays and marl. This wine is made using a similar process each year. The grapes are gently destemmed by hand in the vineyard, then put in tank for a period of semi-carbonic maceration. In 2021 it was for 27 days. When it's time to be pressed, the pressing is also manual and gentle, using an old press. The alcoholic fermentation is completed after the pressing. At bottling a tiny amount of CO2 from the fermentation process is captured and helps with the preservation. The result is a slight prickle which dissipates in the glass. The colour is light, typical of the most ethereal ploussards. The wine is not filtered. 12% ABV.
