Fanny Sabre Savigny-Les-Beaune Rouge 2023
'The vines for this wine are between Beaune and Pernand-Vergelesses. The soil is clay and limestone and the vines are approximately 30 years old. Fanny works her magic on Savigny-Les-Beaune, proving this appellation’s soul can be more silk than muscle. Sourced from 30-year-old vines on the clay-limestone slopes near Pernand-Vergelesses, this 2023 is all about fragrant energy, think wild strawberries, a pinch of white pepper, and the scent of rain on warm earth.
Whole bunches were fermented in open-top oak vats, with gentle punch-downs that tease out perfume without brute force. Aged for 11 months in a mix of 400L barrels and large oak vat, it was bottled unfiltered to preserve every bit of vibrant life.
The result? A Savigny that’s surprisingly light on its feet -juicy, immediate, and made for pure drinking pleasure.
