'The wine is Domaine Belluard Mont Blanc Ayze Brut Zero 2019. It is a Méthode Traditionnelle sparkling wine with no dosage, made from vines, growing on limestone scree and clay soils at around 450 metres above sea level. It has only recently been released, after 3 years on lees before disgorgement. It was only ever made in the best years and will not be made again as the new owners are not going to make sparkling wine. With mineral salinity, length and purity it is a wonderful legacy and a powerful statement of the effectiveness of Dominique’s lifetime work to prove that great wines could be made in the Savoie, particularly from Gringet.'
