Terre de l'Elu 'l'Aiglerie' Rouge 2021 (Cabernet Franc)
L’Aiglerie is a south-facing lieu-dit of Cabernet Franc on sandstone and quartz soils. Here Thomas Carsin farms 40-year old vines from which he makes a serious and elegant version of the variety. After harvesting the grapes by hand into small crates, Thomas ferments this cuvée whole cluster by indigenous yeasts in oak vats followed by aging in vat for 12 months, then 12 more months in neutral French oak barrels.
Fine, lifted Cabernet Franc with purity and drive. This cuvée from Terre de L`Elu has an initial minty nose, followed by red fruit aromas along with fresh herbs and scents of camphor. The smooth, velvety texture softens the fine tannins. A long finish.
Serve at 16°C, don't hesitate to open this wine one hour in advance.
This wine can be enjoyed now but will age for 10 years.
Match it with: a red meat with herbs and vegetables. Likely to be too powerful for white meats.

Vinification: Grapes are hand-harvested with a strict grape selection in the vineyard. Maceration-infusion in whole bunch for 4 to 5 weeks. Natural fermentation using native yeasts. The free run juice and pressed wine are blended together. Ageing for a year in vats and one more year in barrels without racking to soften the wine, no filtration.
