Champagne Stéphane Regnault Grand Cru Blanc de Blancs ‘Chromatique’ NV
One of the softer wines in the release, an almost dew-like Champagne from Stéphane. On the palate, the texture like small pearls, popping. Plenty of white magnolia, jasmine, and lemon blossom - encircled with fresh-cut grass. Sea breeze-like clarity to the palate - fresh and full of seashells. On the palate, it warms up, with white nectarine, lemon oil, and freshly baked brioche. Lingering.
Stéphane wanted to create a non-vintage blend that would be more accessible, richer, and open right upon release. In 2018, he finally had the chance to start and created Chromatique - a wine that uses a bit of everything in the cellar to make a harmonious blend. Stéphane explains that the chromatic scale in music is the one that uses all the available notes, so was a beautiful fit for this wine.

Vinification: Native yeast fermentation. 38% of 2018 in oak, 38% of 2018 in stainless steel, 24% reserve wine. Full malolactic fermentation.
Aging on lees: 24 months
