Made exclusively from Chardonnay grown in the Les Hautes Mottes Grand Cru vineyard in Le Mesnil sur Oger, Dorien No. 99 is the most powerful and structured of Stéphane Regnault's single vineyard Champagnes. The nose opens with aromas of lemon zest, white peach, fresh almond and crushed chalk, complemented by delicate notes of brioche and white flowers. The palate is rich yet remarkably precise, with a creamy texture, vibrant acidity and a long, intensely mineral, saline finish. An outstanding pairing with lobster, scallops, turbot, roasted poultry or aged Comté.

Dorien No. 99 is 100% Chardonnay from Les Hautes Mottes, a south facing Grand Cru parcel with exceptionally fine topsoil over pure, compact chalk. The vines, planted between the 1950s and 1980s, are farmed without synthetic pesticides using natural cover crops, herbal preparations and lunar farming principles. Fermented with native yeasts, the wine is built around Stéphane Regnault's perpetual reserve, preserving the distinct identity of this remarkable terroir while adding layers of depth and complexity. As with all of his single vineyard cuvées, it is vinified primarily in seasoned oak, undergoes full malolactic fermentation and is bottled with minimal intervention to express the vineyard as faithfully as possible.

Stéphane Regnault, a true Renaissance man, shifted from aerospace engineering to sommelier roles in vibrant London and Paris. In 2007, he took over his family’s vineyards in Le Mesnil sur Oger. Crafting Champagne exclusively from his 4 hectares of certified organic and biodynamic vineyards on the prestigious Côtes des Blancs, Stéphane uses only grapes he meticulously tends himself. An inspired young winemaker and avid jazz saxophonist, Stéphane names his cuvées after jazz modes—ancient musical scales that resonate with the character of his wines. His innovative winemaking approach involves creating a trilogy of site-specific cuvées, each enriched with a perpetual reserve. This tradition began with his debut vintage in 2014.
