The grapes for these bubbles come from a single parcel, Les Chanterèzes, a western facing, cool exposure vineyard on the edge of the forest. A large percentage of the soil is of chalky limestone with very little exposed clay. It is a late ripening terroir, ideal for retaining high natural acidity, essential for producing fine crémant.
The dry vin clair is aged in neutral oak through the winter and bottled in late spring. Aged on its lees for 28 months, it is disgorged with no dosage three years after the grapes were harvested.

This is seriously good fizz. The bead is incredibly fine and the whole wine feels fresh, vibrant and full of energy. There’s plenty of stone fruit, pomelo and bright citrus, driven by chalky minerality and acidity for days. Toasted nuts and brioche bring richness and balance without weighing it down. Super complex, utterly delicious and dangerously easy to drink.
