Pepper Tree Wines Block 21A Cabernet Sauvignon 2012
Tasting notes
Blackcurrant, mulberry and mint meet smoky, nutty oak in Campbell Mattinson's 97-point review of the 2012. A concentrated Cabernet with substantial tannin structure and a persistent finish. The winery's aged notes describe cedar and dried-fruit development, with the chalky tannins becoming more integrated.
Vineyard and winemaking
From Block 21A in Pepper Tree's Wrattonbully vineyard, where a shallow layer of terra rossa sandy loam sits over soft limestone. The 2012 was the first separate bottling of this block. Fruit received a five-day cold soak, followed by seven days fermenting on skins at 18–20°C. The wine then matured for fifteen months in selected French oak.
