Made exclusively from Chardonnay grown in the Le Moulin Grand Cru vineyard between Oger and Le Mesnil sur Oger, Mixolydien No. 99 is a beautifully balanced expression of Chardonnay that combines precision with remarkable texture. The nose offers aromas of citrus, fresh baked brioche, toasted bread and orchard fruit, while the palate is silky and layered with deep chalky minerality, vibrant acidity and a long, saline finish. An excellent match for oysters, sashimi, lobster, grilled fish or Comté.

Mixolydien No. 99 is 100% Chardonnay from the Le Moulin Grand Cru parcel, an east facing vineyard planted in the 1970s on thin topsoil over fractured chalk. The wine is based on the 2017 vintage (65%), blended with 35% perpetual reserve wine from 2014 to 2016. Fermented with native yeasts and aged entirely in seasoned oak foudres before spending 58 months on lees, it gains exceptional depth while retaining freshness and tension. The vineyard is farmed without synthetic pesticides, using natural cover crops, herbal preparations and lunar farming principles.

Stéphane Regnault, a true Renaissance man, shifted from aerospace engineering to sommelier roles in vibrant London and Paris. In 2007, he took over his family’s vineyards in Le Mesnil sur Oger. Crafting Champagne exclusively from his 4 hectares of certified organic and biodynamic vineyards on the prestigious Côtes des Blancs, Stéphane uses only grapes he meticulously tends himself. An inspired young winemaker and avid jazz saxophonist, Stéphane names his cuvées after jazz modes—ancient musical scales that resonate with the character of his wines. His innovative winemaking approach involves creating a trilogy of site-specific cuvées, each enriched with a perpetual reserve. This tradition began with his debut vintage in 2014.
